3 Of My Favorite Paleo Recipes- Breakfast, Lunch And Dinner


Before you read this, you might want to read my post - What Is The Famous Paleo Diet?

Below you will find 4 of my favorite healthy Paleo diet recipes. The Paleo diet is the diet of our ancestors. The Paleolithic era occurred during the period spanning from 10,000 to 2.5 million years ago. During that time we were hunter-gatherers. Then things changed with the advent of the agricultural revolution.

Around 10,000 years ago grains were introduced into our diet. This has been a radical dietary shift for mankind. For 99% of our existence man has lived on a grain free diet. Therefore, grains are a “new food.” I believe that certain people such as myself are ill adapted to digest grains and that the consumption of grains can cause chronic “untreatable” health conditions.

Why? Grains contain certain antinutrients which prevent their absorption in the gut. The antinutrients in grains serve as an evolutionary strategy to protect the integrity of the grain so that it can survive. This same protection creates harm in the body of people such as myself. I have been grain free since 2001 and believe it has helped my health immeasurably.

Therefore I have composed this page with 4 of my Paleo recipes. As a lifelong athlete I have personally found that Paleo diet recipes provide superior nutrition for athletic performance. With out further ado, here are my breakfast, lunch and dinner recipes.

Breakfast 

Almond Flour Muffins

  • 4 ounces blanched almond flour (about 1 cup)
  • 4 ounces eggs (about 2 large eggs)
  • 1 ounce agave nectar or honey (around 1 tablespoon)
  • ¼ teaspoon baking soda
  • ½ teaspoon apple cider vinegar
  • In a medium bowl, combine almond flour and baking soda
  • In a large bowl combine eggs, agave and vinegar
  • Stir dry ingredients into wet, mixing until combined
  • Scoop about ¼ cup of batter at a time into a paper lined muffin pan
  • Bake at 350° for 15 minutes, until slightly browned around the edges
  • Cool in the pan for ½ hour
  • Serve with butter and raspberry jam

Makes 4 muffins

Lunch

Green Chili Turkey Burgers


  • 2 (4 oz.) cans diced green chiles
  • 1 pound ground turkey
  • 1 cup cilantro, finely chopped
  • ½ cup onion, finely chopped
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon celtic sea salt
  • In a medium sized bowl mix diced chiles with turkey, cilantro, onion, cumin, chili powder and salt
  • Form into burgers and grill
  • Serve
Dinner


Salmon with Tomato Basil Relish
  • ½ pound salmon
  • 1 cup cherry tomatoes, sliced in quarters
  • ½ small shallot, minced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons fresh basil, finely chopped
  • celtic sea salt to taste
  • Turn oven on to 500°
  • Cut fish into 2 pieces, leaving skin on; rinse and pat dry with paper towel
  • Place fish skin side down on a metal baking sheet
  • Rub fillets liberally with olive oil, then sprinkle with salt
  • Reduce oven temperature to 275°, then put sheet with salmon on lowest rack
  • Roast 8 to 13 minutes –so that centers of thickest part of fillets are still translucent when cut into with a pairing knife
  • To make relish, stir together remaining ingredients from above in a medium size bowl
  • Remove salmon from oven, transfer to plates and serve with relish
